A great recipe if you have lots of apples falling in your garden at this time of year and you don’t know what to do with them all! Cake is always a good place to start! Great recipe courtesy of Abel and Cole -
Ingredients
- 225g self-raising flour (or 220g plain white flour + 1 tsp baking powder)
- ¼ tsp bicarbonate of soda
- A pinch of sea salt
- A pinch of ground cardamom seeds, a grating of fresh ginger (or use ground)
- 100g cold butter, cut into small cubes
- 450g cooking or dessert apples
- A little lemon juice
- 100g sugar
- 2 eggs, beaten
- 50g soft brown or demerara sugar (or caster sugar is fine)
- A sprinkling of ground cinnamon
Instructions
1. Sift flour, bicarb of soda, salt and spices (if using) into a mixing bowl. Mix thoroughly.
2. Cut butter into flour and rub into breadcrumb consistency.
3. Peel the apples. Cut into very small, think pieces. Toss the cut apples in a little lemon juice as you go, to keep them from browning.
4. Mix in apples, caster sugar and eggs into the butter/flour mix. Gently fold through until everything is thoroughly mixed. Turn into a greased cake tin.
5. Level off the top of the batter. Sprinkle with sugar.
6. Bake in a preheated moderately hot oven (200°C/Gas 6) for 30-40 mins. Test with skewer.
7. Remove from oven. Allow to shrink slightly before turning out onto serving plate.
8. Serve hot with clotted cream, yogurt, crème fraîche, or warm and buttered.
* There are lots of twists you can add to this recipe. Play around with herbs and spices. You can also nuts or a little dried fruit, or even chocolate.
